Dix ans plus tard, le tableau a totalement chang\u00e9 : apr\u00e8s avoir \u00e9t\u00e9 chef formateur \u00e0 la r\u00e9sidence du Refugee Food pendant deux ans, il est aujourd\u2019hui \u00e0 la t\u00eate de son propre restaurant, Waalo, dans le 2e arrondissement de Paris, et, depuis septembre, dirige en parall\u00e8le La Cantine des Arbustes, un restaurant social, situ\u00e9 dans le 14e arrondissement.<\/p>\n<p>Alors, forc\u00e9ment, quand on contacte le chef d\u2019origine mauritanienne pour une interview, on entend le tintement des casseroles et autres faitouts en arri\u00e8re-fond, et il faut caler questions et r\u00e9ponses avant que ne soit exp\u00e9di\u00e9e la prochaine fourn\u00e9e.<\/p>\n<p>Avant de passer derri\u00e8re fourneaux, Harouna Sow n\u2019\u00e9tait pas un fin gourmet. Sa vision de la gastronomie se cantonnait \u00e0 trois repas par jour, histoire de se nourrir. \u00ab Je n\u2019avais m\u00eame pas sp\u00e9cialement de plaisir de l\u2019assiette, je mangeais pour me remplir l\u2019estomac \u00bb, confie-t-il. Jamais il ne s\u2019\u00e9tait demand\u00e9 qui avait plant\u00e9 les l\u00e9gumes, \u00e9lev\u00e9 les animaux de boucherie, cuisin\u00e9 les plat qui s\u2019offraient \u00e0 lui. \u00ab Pour moi, c\u2019\u00e9tait juste naturel de manger. Je savais dire si c\u2019\u00e9tait bon ou pas, et hop, je passais \u00e0 autre chose \u00bb, se souvient-il, amus\u00e9.<\/p>\n<p>Cuisine ou BTP ?<br \/>\nMais, quand on a quitt\u00e9 la Mauritanie pour la France, les offres de formation sont limit\u00e9es dans le pays d\u2019accueil : \u00ab On me proposait soit le b\u00e2timent soit la restauration. Or le BTP ne me correspondait pas du tout \u00bb, admet-il. Le voil\u00e0 donc apprenti au Pullman Paris Tour Eiffel, aupr\u00e8s du chef Alain Losbar. Les deux premi\u00e8res ann\u00e9es, il voit dans ce travail un simple emploi alimentaire. \u00ab De l\u00e0 o\u00f9 je viens, \u00eatre cuisinier c\u2019est exercer un m\u00e9tier de femme, c\u2019est presque li\u00e9 \u00e0 une image de soumission, p\u00e9jorative. \u00c7a n\u2019a pas \u00e9t\u00e9 du go\u00fbt de tout le monde, dans ma famille ! \u00bb rappelle-t-il.<\/p>\n<p>\u00c0 l\u2019aise sous sa toque, il \u00e9voque l\u2019\u00e9cart qui s\u00e9pare radicalement la repr\u00e9sentation de la gastronomie dans les deux pays : \u00ab En France, elle est tr\u00e8s populaire et b\u00e9n\u00e9ficie d\u2019un fort ancrage culturel \u00bb. Et reconna\u00eet qu\u2019\u00e0 ses d\u00e9buts, il a eu du mal \u00e0 s\u2019approprier le m\u00e9tier, \u00e0 trouver sa place, \u00e0 travailler pour des maisons fran\u00e7aises sur des recettes qu\u2019il ne connaissait pas.<\/p>\n<p>J\u2019ai d\u00e9couvert que la gastronomie \u00e9tait capable d\u2019influencer toute une nation<\/p>\n<p>Mais Losbar l\u2019\u00e9veille \u00e0 la discipline, lui fait rencontrer des producteurs, et, finalement, change son regard sur ce m\u00e9tier. Harouna Sow finit par avoir un d\u00e9clic, gr\u00e2ce \u00e0 son mentor : \u00ab Il m\u2019a ouvert sa porte et m\u2019a form\u00e9. Il m\u2019a dit : \u201cJe vais te transmettre quelque chose de tr\u00e8s important, sans \u00e7a, tu n\u2019iras pas loin\u201d, en m\u2019\u00e9duquant \u00e0 l\u2019histoire des traditions culinaires fran\u00e7aises. Il m\u2019a d\u00e9montr\u00e9 qu\u2019on pouvait trouver sa place dans une soci\u00e9t\u00e9 gr\u00e2ce \u00e0 la cuisine. J\u2019ai ouvert les yeux sur le pouvoir universel de la gastronomie, capable d\u2019influencer toute une nation. \u00bb Rien \u00e0 voir avec l\u2019image du \u00ab boulot \u00bb qu\u2019il avait en t\u00eate, avoue-t-il avec d\u00e9tachement.<\/p>\n<p>L\u2019engagement de tous les corps de m\u00e9tiers autour de la table le fascine. Deux ans plus tard, la cuisine devient une passion. \u00ab Cuisiner donne un certain pouvoir sur les gens que l\u2019on rencontre, et, chaque jour, on voit de nouvelles t\u00eates \u00bb, observe celui qui accompagne les actions de l\u2019association Refuge Food.<\/p>\n<p>Harouna Sow voit en effet dans son statut de chef l\u2019occasion de redonner un peu de \u00ab chez soi \u00bb \u00e0 ceux qui ont \u00e9t\u00e9 contraints de partir. Quand l\u2019exil d\u00e9chire une existence et prive de tout rep\u00e8re, la gastronomie r\u00e9conforte. Losbar avait raison, elle a offert \u00e0 Sow une nouvelle histoire. Pendant deux ans, il a \u00e9t\u00e9 chef-formateur pour l\u2019association, m\u00fb par l\u2019envie d\u2019offrir \u00e0 d\u2019autres la chance dont il a b\u00e9n\u00e9fici\u00e9.<\/p>\n<p>\u00ab Dans les cuisines de restaurants, il y a beaucoup de personnel issu de l\u2019immigration, que l\u2019on ne met pas en avant et qui travaille \u00e9norm\u00e9ment \u00bb, argumente-t-il. Sans \u00eatre sur le devant de la sc\u00e8ne, \u00ab une forte communaut\u00e9 d\u2019Afrique noire contribue \u00e0 la gastronomie fran\u00e7aise. En tant que chef noir en France, j\u2019ai aussi envie de d\u00e9fendre ma culture, de montrer qu\u2019on a de beaux produits, et d\u2019entra\u00eener une communaut\u00e9 avec moi dans cette d\u00e9marche \u00bb.<\/p>\n<p>Tr\u00e9sors d\u2019Afrique<br \/>\nJustement, comme ce sont les produits qui font l\u2019assiette, l\u2019Afrique de l\u2019Ouest gagnerait, selon lui, \u00e0 exploiter davantage ceux qu\u2019elle cultive, \u00e0 mettre en valeur ses tr\u00e9sors naturels, comme le kink\u00e9liba, une plante qui peut faire penser au th\u00e9 et qui pousse dans la brousse. Ce qu\u2019il pr\u00e9f\u00e8re pr\u00e9parer ? Le couscous, mais plut\u00f4t \u00e0 la mode s\u00e9n\u00e9galaise ou mauritanienne que dans sa version maghr\u00e9bine : \u00e0 base de mil, une c\u00e9r\u00e9ale plus parfum\u00e9e que la semoule de bl\u00e9, du moins d\u2019apr\u00e8s lui ! S\u2019il en existe de nombreuses variantes, avec de l\u2019agneau ou du chameau, on lui trouve toujours un ingr\u00e9dient commun, utilis\u00e9 uniquement dans ces r\u00e9gions : du poisson fum\u00e9 ou s\u00e9ch\u00e9. \u00ab Cet accord terre-mer est difficile \u00e0 ma\u00eetriser et tr\u00e8s int\u00e9ressant pour le couscous, auquel il donne un go\u00fbt iod\u00e9 \u00bb, pr\u00e9cise-t-il.<\/p>\n<p>Le maf\u00e9 peut trouver sa place partout dans le monde et dans tous les \u00e9tablissements<\/p>\n<p>Quand on lui demande d\u2019analyser ce que la gastronomie africaine peut apporter \u00e0 la gastronomie fran\u00e7aise, il coupe court. Le message qu\u2019il veut faire passer par l\u2019assiette n\u2019est pas celui-l\u00e0. Commen\u00e7ons d\u00e9j\u00e0 par faire conna\u00eetre la gastronomie africaine, \u00f4 combien riche et d\u00e9licieuse, avant de vouloir la fondre avec une cuisine plus connue ! C\u2019est dans cette direction que lui veut aller : entra\u00eener les palais occidentaux aux saveurs d\u2019Afrique. Avec du maf\u00e9, par exemple. M\u00eame si ce n\u2019est pas toujours du go\u00fbt de tous, y compris des connaisseurs : \u00ab Quand je fais du maf\u00e9 dans des restaurants, on me dit parfois que c\u2019est un plat qui doit rester \u00e0 la maison. Je ne suis pas d\u2019accord.
