La moutarde, troisi\u00e8me condiment parmi les plus consomm\u00e9s dans l\u2019Hexagone, derri\u00e8re le sel et le poivre, a disparu des supermarch\u00e9s. Victime, elle aussi, du r\u00e9chauffement climatique.<\/p>\n<p>Premier producteur europ\u00e9en et premier exportateur mondial de moutarde, la France importe 80 % de sa mati\u00e8re premi\u00e8re du Canada, o\u00f9 la derni\u00e8re s\u00e9cheresse a ravag\u00e9 les r\u00e9coltes de Brassica juncea et de Brassica nigra, autrement appel\u00e9es moutardes brune ou noire \u2013 une plante de la m\u00eame famille que le colza.<\/p>\n<p>La production locale, en Bourgogne, n\u2019a pas non plus \u00e9t\u00e9 \u00e9pargn\u00e9e, et la guerre russo-ukrainienne a priv\u00e9 l\u2019Hexagone de ses potentiels fournisseurs de secours. Les producteurs promettent un r\u00e9approvisionnement des stocks pour le mois de novembre, car le cru 2022 a \u00e9t\u00e9 bon. Mais, avec l\u2019aggravation du changement climatique, les p\u00e9nuries risquent de se multiplier.<\/p>\n<p>Et si la solution \u00e9tait dans les placards des cuisiniers ouest-africains ? Du Niger \u00e0 la Guin\u00e9e-Bissau, on conna\u00eet bien la \u00ab moutarde africaine \u00bb, un type de f\u00e9verole appel\u00e9e soumbala en bambara, netetou en wolof, afitin en fon-gbe et dawadawa en igbo. Elle est produite \u00e0 partir de graines de n\u00e9r\u00e9, un arbre nourricier des savanes soudanaises et sah\u00e9liennes aussi connu sous le nom de mimosa pourpre. La pulpe jaune de son fruit, sucr\u00e9e et glucidique, est utilis\u00e9e comme farine, tandis que ses graines noires sont soit cuites, ferment\u00e9es et vendues sous forme de boulettes \u00e0 l\u2019odeur forte caract\u00e9ristique, soit s\u00e9ch\u00e9es, grill\u00e9es et pil\u00e9es pour \u00eatre consomm\u00e9es en poudre.<\/p>\n<p>Bonne p\u00e2te et pommade<br \/>\n\u00ab Utilis\u00e9e sous cette forme, elle tire plut\u00f4t du c\u00f4t\u00e9 de la noix de muscade, observe Fousseyni Djikine, cofondateur d\u2019origine malienne des cantines BMK, \u00e0 Paris. Dans nos restaurants, on l\u2019utilise pour le maf\u00e9. Le soumbala apporte une saveur assez atypique, qui est difficile \u00e0 d\u00e9crire, mais qui parfume la sauce. Pour les connaisseurs, c\u2019est \u00e7a qui fait le bon maf\u00e9 du pays ! \u00bb<\/p>\n<p>On le croit ais\u00e9ment, \u00e0 sentir l\u2019ar\u00f4me puissant, l\u00e9g\u00e8rement cacaot\u00e9, qui s\u2019\u00e9chappe de la cuisine ouverte de son restaurant du 10e arrondissement. Mais il ne s\u2019agit pas stricto sensu d\u2019un substitut de la moutarde, nuance-t-il, car celle-ci est \u00ab caract\u00e9ristique de la cuisine fran\u00e7aise. En revanche, leur point commun est que, comme pour la moutarde, le soumbala transforme radicalement un plat ! \u00bb<\/p>\n<p>Au contraire de la moutarde fran\u00e7aise et de ses cousins de l\u2019Est, le raifort et le wasabi, le soumbala ne monte pas au nez. Il sert surtout de succ\u00e9dan\u00e9 d\u2019\u00e9pices dans des pays qui en sont d\u00e9pourvus, explique l\u2019entrepreneuse et cheffe d\u2019origine camerounaise Nathalie Brigaud Ngoum, notamment dans la r\u00e9gion du Sahel, avec son climat d\u00e9sertique.<br \/>\n\u00ab Comme on a peu d\u2019arbres, on utilise, pour parfumer les plats, des ingr\u00e9dients ferment\u00e9s, du poisson pour les pays c\u00f4tiers ou, justement, du soumbala \u00bb, explique-t-elle. Mais pour transformer les graines de n\u00e9r\u00e9 en une authentique moutarde africaine, il faut se retrousser les manches. \u00ab Si on veut aller jusqu\u2019au bout de l\u2019exp\u00e9rience, le soumbala ne doit pas \u00eatre utilis\u00e9 en poudre, comme une \u00e9pice, mais en pommade, comme un condiment. \u00bb<\/p>\n<p>Bonne p\u00e2te, Nathalie Brigaud accepte de donner sa recette. \u00ab Vous achetez les graines de n\u00e9r\u00e9 pr\u00e9par\u00e9es et ferment\u00e9es, et vous les \u00e9crasez avec de l\u2019huile, du vinaigre et du citron. Vous ajoutez de la farine de manioc ou de patate douce, pour l\u2019onctuosit\u00e9, et du curcuma, pour obtenir une belle p\u00e2te jaune fonc\u00e9. Vous pouvez l\u2019utiliser fra\u00eeche pour relever une viande ou un poisson, ou la cuire et la mettre en pot, pour la conserver un peu plus longtemps. \u00bb Si le parfum du soumbala pur peut rebuter les nez sensibles, cette moutarde africaine maison, promet la cheffe, est accessible m\u00eame aux n\u00e9ophytes. \u00ab En fait, \u00e7a donne une moutarde presque classique\u2026 mais sans moutarde. C\u2019est un condiment m\u00e9tiss\u00e9, au croisement des cuisines europ\u00e9ennes et africaines ! \u00bb<\/p>\n<p>\u00ab Superaliment \u00bb<br \/>\nReste \u00e0 trouver des fournisseurs.
