La coiffeuse, qui cuisinait \u00e9galement sur le march\u00e9, \u00ab\u00a0aurait eu l\u2019id\u00e9e de malaxer des tomates cerises revenues avec des oignons, donnant au thiep cette belle couleur rouge\u00a0\u00bb, rapporte Fatima Fall Niang, directrice du Centre de recherches et de documentation du S\u00e9n\u00e9gal (CRDS) \u00e0 Saint-Louis. Bien que son existence n\u2019ait jamais \u00e9t\u00e9 confirm\u00e9e, l\u2019appellation \u00ab\u00a0ceebu j\u00ebn Penda Mbaye\u00a0\u00bb persiste encore de nos jours pour d\u00e9signer le plat original.<\/p>\n<p>\u00ab\u00a0Un plat complet et riche\u00a0\u00bb<br \/>\n\u00ab\u00a0Le thiep saint-louisien, c\u2019est un riz rouge, color\u00e9 par les tomates, du poisson, et c\u2019est un plat qui fait la part belle aux l\u00e9gumes, car nous sommes \u00e0 l\u2019embouchure du fleuve S\u00e9n\u00e9gal, une r\u00e9gion o\u00f9 l\u2019on pratique le mara\u00eechage. Il est compl\u00e9t\u00e9 par du suweer (aussi appel\u00e9 diaga), c\u2019est-\u00e0-dire des boulettes de poisson, souvent du thon rouge ou de la sardinelle, auquel certains ajoutent des crevettes. A part, on r\u00e9alise \u00e9galement une sauce au tamarin. C\u2019est un plat complet et riche\u00a0\u00bb, d\u00e9taille Marie-Caroline Camara, Saint-Louisienne par son p\u00e8re et g\u00e9rante de la maison d\u2019h\u00f4tes Au Fil du Fleuve, dans cette ville.<\/p>\n<p>Le riz, bris\u00e9, et le poisson, farci avec un m\u00e9lange d\u2019ail, de persil et d\u2019oignon vert, sont les ingr\u00e9dients essentiels du plat. Mais, d\u2019une r\u00e9gion et d\u2019une ethnie \u00e0 une autre, les recettes diff\u00e8rent sensiblement. \u00ab Les Lebou [une communaut\u00e9 de p\u00eacheurs, majoritaire sur la presqu\u2019\u00eele de Dakar] ont ajout\u00e9 le yet et le guedj, des poissons et crustac\u00e9s s\u00e9ch\u00e9s \u00bb, pr\u00e9cise Astou Diop, qui ajoute en souriant : \u00ab Il y a une orthodoxie saint-louisienne qui n\u2019accepte pas les modifications. \u00bb<\/p>\n<p>Tous les ingr\u00e9dients sont cuits dans une m\u00eame marmite, ajout\u00e9s progressivement selon le temps de cuisson de chacun, afin que le plat mijote pour lib\u00e9rer les diff\u00e9rentes saveurs durant environ trois heures. Ce savoir-faire est transmis de m\u00e8re en fille, mais depuis une dizaine d\u2019ann\u00e9es des hommes s\u2019en emparent lors d\u2019\u00e9v\u00e9nements comme des f\u00eates religieuses.<\/p>\n<p>Fruit du m\u00e9tissage<br \/>\nLe \u00ab\u00a0riz au poisson\u00a0\u00bb (traduction litt\u00e9rale du nom du plat) a une forte valeur sociale. Partag\u00e9 autour d\u2019un bol, il appelle \u00e0 la convivialit\u00e9 et \u00e0 la transmission des valeurs ch\u00e8res au pays de la teranga (\u00ab\u00a0hospitalit\u00e9\u00a0\u00bb en wolof). \u00ab\u00a0Autrefois, il permettait \u00e9galement l\u2019\u00e9ducation\u00a0: une personne \u00e2g\u00e9e distribuait aux enfants des portions de l\u00e9gumes, de poisson et \u00e9galisait la quantit\u00e9 de riz afin que tout le monde soit au m\u00eame niveau. On enseignait \u00e9galement les mani\u00e8res de se bien comporter\u00a0\u00bb, explique Fatima Fall Niang, coautrice avec Alpha Amadou Sy de l\u2019ouvrage Le Ceebu J\u00ebn, un patrimoine bien s\u00e9n\u00e9galais.<\/p>\n<p>Devenu plat national, le thi\u00e9boudi\u00e8ne est le fruit d\u2019un m\u00e9tissage et le r\u00e9sultat de l\u2019histoire coloniale. Import\u00e9 depuis les colonies d\u2019Indochine, avant qu\u2019il ne soit cultiv\u00e9 localement, le riz a remplac\u00e9 le mil ou le fruit du baobab qui accompagnaient auparavant le poisson. \u00ab\u00a0Le thiep a toujours \u00e9t\u00e9 international\u00a0: on y retrouve les quatre continents\u00a0avec les l\u00e9gumes d\u2019Europe, le riz d\u2019Asie, les oignons des Etats-Unis et le poisson du S\u00e9n\u00e9gal, seul ingr\u00e9dient vraiment local\u00a0\u00bb, d\u00e9veloppe-t-elle. Les communaut\u00e9s se sont ainsi appropri\u00e9 cette recette au point de l\u2019imposer comme \u00ab\u00a0patrimoine gastronomique authentiquement s\u00e9n\u00e9galais\u00a0\u00bb.<\/p>\n<p>C\u2019est pour ancrer ce patrimoine, et devancer le Nigeria et le Ghana qui convoitaient la paternit\u00e9 de ce qu\u2019ils nomment jollof rice, qu\u2019une demande a \u00e9t\u00e9 d\u00e9pos\u00e9e en\u00a02020 \u00e0 l\u2019Unesco. \u00ab\u00a0Il y a eu un fort engagement de la communaut\u00e9 de Saint-Louis\u00a0: les p\u00eacheurs, les chercheurs, les \u00e9lus,\u00a0etc. L\u2019engouement a \u00e9t\u00e9 consid\u00e9rable\u00a0\u00bb, se rappelle la directrice du CRDS, charg\u00e9e de coordonner le dossier. Ce plat qui fait la fiert\u00e9 des S\u00e9n\u00e9galais a \u00e9t\u00e9 inscrit sur la liste du patrimoine culturel immat\u00e9riel en d\u00e9cembre 2021.<\/p>\n<p>La recette, ambassadrice de la cuisine s\u00e9n\u00e9galaise, peut agir, selon Fatima Niang Fall, comme un agent de diplomatie gastronomique pour promouvoir le pays, mais aussi la ville de Saint-Louis. \u00ab\u00a0Il ne faut pas s\u2019arr\u00eater \u00e0 la consommation du thiep comme quelque chose de culturel, cela doit servir \u00e0 tous les secteurs\u00a0: \u00e9conomie, sanitaire et tourisme\u00a0\u00bb, d\u00e9fend-elle.<\/p>\n<p>Impossible de le revisiter\u00a0?<br \/>\nDans cette optique, une r\u00e9sidence de cr\u00e9ation et de design culinaire appel\u00e9e Waa\u00f1 Wi (\u00ab\u00a0la cuisine\u00a0\u00bb), soutenue par la villa Saint-Louis Ndar, l\u2019ambassade de France et le r\u00e9seau Chefs in Africa, s\u2019est tenue du 13 au 19\u00a0mars \u00e0 Saint-Louis. Orchestr\u00e9e par Table Pana, une structure organisant des d\u00eeners priv\u00e9s \u00e0 Dakar, elle s\u2019\u00e9tait donn\u00e9 pour objectif de mettre en lumi\u00e8re des produits du terroir cuisin\u00e9s par trois chefs internationaux.<\/p>\n<p>\u00ab Les chefs de la diaspora africaine ont le vent en poupe : on fait d\u00e9couvrir une autre gastronomie, un m\u00e9tissage entre produits du continent, comme le mil, le fonio, et codes de la cuisine occidentale \u00bb, raconte Senda Waguena, chef togolais qui a mis le thi\u00e9boudi\u00e8ne \u00e0 la carte de son restaurant parisien, Jujube. Le S\u00e9n\u00e9galais Omar Ngom se f\u00e9licite de voir d\u00e9sormais ce plat s\u2019imposer dans des restaurants, y compris gastronomiques, et imprimer sa marque mondialement.<\/p>\n<p>Pour ces deux chefs, impossible de le revisiter. \u00ab\u00a0On ne peut pas toucher \u00e0 ce monument de notre patrimoine\u00a0\u00bb, affirme, cat\u00e9gorique, Omar Ngom. Pour sa part, Julie Basset, cheffe priv\u00e9e et designer culinaire fran\u00e7aise participant \u00e9galement \u00e0 la r\u00e9sidence, se voit bien proposer une version d\u00e9compos\u00e9e du plat, \u00e0 laquelle elle pourrait ajouter de petites touches personnelles.<\/p>\n<p>Reste que, si les eaux du S\u00e9n\u00e9gal figurent parmi les plus poissonneuses du monde, la surp\u00eache r\u00e9duit fortement ses ressources halieutiques, provoquant une hausse des prix. \u00ab\u00a0Le thiof [\u201cm\u00e9rou\u201d] est devenu un luxe\u00a0\u00bb, soupire Bachir Diop. Les\u00a0usines de farine et d\u2019huile de poisson participent \u00e9galement au ph\u00e9nom\u00e8ne\u00a0: en achetant massivement des sardinelles pour fabriquer\u00a0des produits destin\u00e9s \u00e0 la pisciculture, elles privent les m\u00e9nages de ce poisson tr\u00e8s consomm\u00e9 et peu on\u00e9reux. Au-del\u00e0 du thi\u00e9boudi\u00e8ne, c\u2019est surtout la s\u00e9curit\u00e9 alimentaire qui est menac\u00e9e, le poisson \u00e9tant le principal apport en prot\u00e9ines des S\u00e9n\u00e9galais.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00ab L\u2019Afrique passe \u00e0 table \u00bb (2).
