L\u2019a-t-il devin\u00e9 d\u00e8s 1984, alors qu\u2019il faisait ses premiers pas dans le secteur ? La question ainsi formul\u00e9e le fait sourire mais, c\u2019est bien l\u00e0 le r\u00e9sum\u00e9 de son parcours. \u00ab Oui, je sais ce que je voulais en embrassant ce secteur : une aventure humaine \u00bb, r\u00e9pond-t-il avant d\u2019encha\u00eener sur une litanie de souvenirs dont il entrem\u00eale parfois les dates.<\/p>\n<p>Tout a commenc\u00e9 dans la capitale togolaise, Lom\u00e9. Apr\u00e8s avoir \u00e9court\u00e9 son cursus scolaire au lyc\u00e9e, il se fraie aussit\u00f4t son propre chemin en int\u00e9grant l\u2019embl\u00e9matique h\u00f4tel 2 f\u00e9vrier Sofitel de 36 \u00e9tages, dont le restaurant est tenu par des cuisiniers togolais et fran\u00e7ais. Un \u00e9tablissement connu pour accueillir les invit\u00e9s de marque du pr\u00e9sident Gnassingb\u00e9 Eyad\u00e9ma et organiser de grandes r\u00e9unions. Tr\u00e8s vite, Kunkel excelle et, au bout de cinq ans, il d\u00e9cide de poursuivre sa passion en France.<\/p>\n<p>Chef et formateur<br \/>\n\u00c0 peine d\u00e9barqu\u00e9 dans l\u2019Hexagone, en 1989, il int\u00e8gre le Sofitel Orl\u00e9ans et passe quatre ans plus tard, en 1993, le brevet de ma\u00eetrise d\u2019artisan cuisinier qu\u2019il d\u00e9croche \u00ab haut les mains \u00bb (sic). Ce dipl\u00f4me lui conf\u00e8re le statut de formateur et confirme son titre de chef. Une prouesse pour le jeune cuisinier qui voit d\u00e9sormais les portes des grandes maisons et des meilleures tables fran\u00e7aises s\u2019offrir \u00e0 lui. C\u2019est ainsi qu\u2019il officiera en tant que chef cuisinier chez Ecu de Bretagne, au Sofitel Paris La D\u00e9fense et au Jules Verne, situ\u00e9 au deuxi\u00e8me \u00e9tage de la Tour Eiffel et sp\u00e9cialis\u00e9 en cuisine fran\u00e7aise traditionnelle.<\/p>\n<p>En 40 ans d\u2019exercice, P\u00e9pin Kunkel, 61 ans, a aussi travaill\u00e9 au Fouquet\u2019s, fameux restaurant de l\u2019avenue des Champs-\u00c9lys\u00e9es, chez Jacques Cagna \u2013 deux macarons au Michelin et l\u2019une des dix meilleures tables parisiennes en son temps \u2013, au Bel Canto Neuilly, au Mus\u00e9e du Louvre, \u00e0 la Maison de l\u2019Am\u00e9rique latine puis au sein de Caviar House &amp; Prunier.<\/p>\n<p>En 2004, il d\u00e9cide de lancer son propre restaurant, Le Plate\u2019s, \u00e0 Pantin, \u00e0 quelques encablures de Paris, o\u00f9 il continue d\u2019\u00e9moustiller les papilles de ses diff\u00e9rents clients. \u00c0 son propre compte, il intervient aussi comme traiteur lors des grandes r\u00e9unions, des mariages et des r\u00e9ceptions. Parfois, il offre des formations \u00e0 la carte aux aspirants cuisiniers et \u00e0 des particuliers.<\/p>\n<p>La touche de P\u00e9pin<br \/>\nNonobstant sa formation classique fran\u00e7aise, le chef togolais reste avant tout un esprit cr\u00e9atif, aimant travailler \u00e0 partir des produits dont il dispose. Il peut ainsi cuisiner un plat de djinkoum\u00e8 \u2013 une sp\u00e9cialit\u00e9 du Togo \u00e0 base de farine de ma\u00efs et de viande de volaille \u2013 tout comme le homard et la truffe, deux produits de luxe qu\u2019il s\u2019applique \u00e0 cuisiner \u00ab avec d\u00e9licatesse, sans les brusquer \u00bb. Pour ce faire, il monte une bisque cr\u00e9meuse avec la t\u00eate de homard, cuit ensuite la queue \u00e0 la vapeur, sous film pour ne pas brutaliser la chair. \u00c0 table, il sert cette pr\u00e9paration avec des l\u00e9gumes de saison avec de la truffe finement coup\u00e9e.<\/p>\n<p>Chez P\u00e9pin Kunkel, il n\u2019y a pas de sp\u00e9cialit\u00e9 culinaire. Face aux produits, qu\u2019ils soient de saison ou bio \u2013 ce qui n\u2019est pas syst\u00e9matiquement le cas, en raison du prix \u2013 il travaille selon les souhaits du client et son inspiration.<\/p>\n<p>\u00ab Je n\u2019ai pas d\u2019a priori. Quand je suis devant un produit, j\u2019imagine la meilleure fa\u00e7on de le cuisiner \u00bb, dit-il. Son restaurant de Pantin, qu\u2019il a c\u00e9d\u00e9 il y a 18 mois, proposait deux cartes distinctes : une pour les week-ends destin\u00e9e \u00e0 sa client\u00e8le africaine, et une seconde pour les midis et soirs de semaines, plut\u00f4t destin\u00e9s \u00e0 sa client\u00e8le europ\u00e9enne. Son plat signature : l\u2019effeuill\u00e9 de cabillaud accord\u00e9 \u00e0 la ciboulette sur patate douce chaire jaune, vendu comme une entr\u00e9e (entre 10-12 euros) ou en plat de r\u00e9sistance jusqu\u2019\u00e0 25 euros.<\/p>\n<p>\u00ab C\u2019est un plat qui est n\u00e9 d\u2019une rencontre fortuite entre produits. Il marche aussi bien avec les Africains qu\u2019avec les Europ\u00e9ens. Il suffit de mettre du piment ou pas, et chacun y trouve son compte \u00bb, d\u00e9taille l\u2019artisan. Il en est de m\u00eame pour les \u00ab brochettes p\u00e9pin \u00bb appel\u00e9 en langue locale \u00ab tchintchinga \u00bb pr\u00e9par\u00e9es \u00e0 base de viande de b\u0153uf, de poulet ou de mouton. \u00ab J\u2019essaie de mettre notre client\u00e8le \u00e0 l\u2019aise avec nos menus th\u00e9matiques \u00bb, insiste-t-il.<\/p>\n<p>Apr\u00e8s avoir c\u00e9d\u00e9 son restaurant en raison de son \u00e2ge \u2013 et avec l\u2019intention d\u2019en ouvrir un autre, plus petit \u2013 P\u00e9pin Kunkel \u00e9volue en freelance avec la maison Len\u00f4tre, le restaurant Saint-Clair et dans des clubs de direction comme chef ext\u00e9rieur. Depuis plus de vingt ans, il est r\u00e9guli\u00e8rement sollicit\u00e9 par la chambre des m\u00e9tiers et de l\u2019artisanat de Paris pour si\u00e9ger dans les jurys de CAP cuisine et BAC pro. En parall\u00e8le, il participe aussi \u00e0 des rencontres de partage de savoir-faire en France, tout comme sur le continent. Du 26 avril au 9 mai, le chef a pris part \u00e0 Lom\u00e9 \u00e0 la deuxi\u00e8me \u00e9dition du festival international la Marmite (Fesma), aux c\u00f4t\u00e9s d\u2019Olivia De Souza, marraine de l\u2019\u00e9v\u00e8nement qui promeut la culture gastronomique togolaise.<\/p>\n<p>Identit\u00e9 culinaire togolaise<br \/>\nPour lui, le festival est une initiative de valorisation de la cuisine togolaise mais aussi de promotion de l\u2019identit\u00e9 culinaire togolaise. \u00ab Le Fesma a les ambitions du Fespaco au Burkina Faso pour le cin\u00e9ma ! C\u2019est pour cela que nous sommes plusieurs chefs cuisiniers africains venus du B\u00e9nin, du Congo, du Gabon, de Madagascar et du Togo pour partager nos exp\u00e9riences avec nos cadets \u00bb, souligne P\u00e9pin Kunkel.<\/p>\n<p>Jadis bien identifi\u00e9e gr\u00e2ce au djinkoum\u00e8, au khom \u2013 cuit \u00e0 la vapeur, ce met compos\u00e9 de farine de ma\u00efs est souvent accompagn\u00e9 de tomates, de friture de piment br\u00fbl\u00e9 ou \u00e9b\u00e9ss\u00e9 fionfion en langue locale, de poisson frit et d\u2019oignons finement cisel\u00e9 \u2013, ou gr\u00e2ce \u00e0 sa sauce de pieds de b\u0153uf, la cuisine togolaise est aujourd\u2019hui en perte de visibilit\u00e9, ce que le festival la Marmite tente de corriger.<\/p>\n<p>\u00ab Nous avons fait le pari de valoriser les richesses, les saveurs et les savoir-faire togolais ou africains, confie le promoteur du Fesma, Jean-Paul Agboh Ahou\u00e9l\u00e9t\u00e9. Nous voulons aussi encourager le consommer local et une alimentation saine et \u00e9quilibr\u00e9e.
