Pour d\u00e9finir la cuisine du Maghreb, les superlatifs ne manquent pas. Ils traduisent la m\u00e9connaissance d\u2019un r\u00e9gime m\u00e9diterran\u00e9en qui ne se r\u00e9sume pas au couscous. Si ce plat est inscrit au patrimoine culturel immat\u00e9riel de l\u2019Unesco depuis 2020, sa valorisation tardive a failli provoquer un incident diplomatique, diff\u00e9rentes nations ayant revendiqu\u00e9 sa paternit\u00e9.<\/p>\n<p>Con\u00e7u par l\u2019Alg\u00e9rie, ce projet a finalement \u00e9t\u00e9 ins\u00e9r\u00e9 dans un dossier commun, d\u00e9fendu par plusieurs pays voisins. Une candidature qui t\u00e9moigne du besoin de reconnaissance de l\u2019Alg\u00e9rie s\u2019agissant de sa gastronomie, encore peu ou mal connue, notamment en France, o\u00f9 la diaspora repr\u00e9sente pourtant la premi\u00e8re population d\u2019origine \u00e9trang\u00e8re.<\/p>\n<p>\u00ab Notre cuisine n\u2019est pas r\u00e9pandue, confirme la dynamique Hanane Abdelli, g\u00e9rante de Mama Nissa, l\u2019une des rares tables consacr\u00e9es \u00e0 la cuisine alg\u00e9rienne situ\u00e9e en plein c\u0153ur de Paris. D\u2019abord, sa transmission est orale. On apprend en regardant nos m\u00e8res et grands-m\u00e8res cuisiner. Ensuite, l\u2019absence de tourisme en Alg\u00e9rie n\u2019a pas permis son expansion. Enfin, le pass\u00e9 qui lie la France et l\u2019Alg\u00e9rie reste empreint d\u2019\u00e9pisodes traumatiques, qui ont contribu\u00e9 \u00e0 ce que notre patrimoine culinaire soit faiblement repr\u00e9sent\u00e9 \u00bb.<\/p>\n<p>C\u2019est pour pallier cette lacune que cette Fran\u00e7aise, n\u00e9e de parents alg\u00e9riens arriv\u00e9s \u00e0 Paris dans les ann\u00e9es 1980, a \u00e9crit un livre de recettes avec sa m\u00e8re, Anissa, d\u00e9j\u00e0 aux fourneaux du restaurant qui porte son nom.<\/p>\n<p>Diversit\u00e9 r\u00e9gionale<\/p>\n<p>Sur la fa\u00e7ade de cette jolie cantine aux tons bleu canard, on peut lire : \u00ab Sp\u00e9cialit\u00e9s r\u00e9gionales d\u2019Alg\u00e9rie \u00bb. Un parti pris assum\u00e9 par la fondatrice du lieu d\u00e8s son ouverture, en 2020. \u00ab Nous sommes peu de chefs alg\u00e9riens \u00e0 Paris, et les rares qui existent tiennent des restaurants marocains ou bien misent sur une cuisine m\u00e9diterran\u00e9enne sans faire r\u00e9f\u00e9rence \u00e0 l\u2019Alg\u00e9rie dans leur menu, car notre cuisine souffre d\u2019un certain nombre de clich\u00e9s \u00bb, estime-t-elle. Pas de quoi d\u00e9courager la p\u00e9tillante Hanane, qui accueille dans son petit espace \u00e9l\u00e9gamment d\u00e9cor\u00e9 une client\u00e8le aussi m\u00e9tiss\u00e9e que sa cuisine.<\/p>\n<p>Mama Nissa puise sa richesse non dans l\u2019exc\u00e8s d\u2019huile et de sucre \u2013 dont la dose a \u00e9t\u00e9 r\u00e9duite de 25% dans les excellentes p\u00e2tisseries sign\u00e9es Maison Yasmina propos\u00e9es en dessert \u2013, mais dans la diversit\u00e9 des sp\u00e9cificit\u00e9s r\u00e9gionales. \u00ab Des plats du Nord, influenc\u00e9s par les saveurs m\u00e9diterran\u00e9ennes, aux recettes du Sud, impr\u00e9gn\u00e9es d\u2019authenticit\u00e9 berb\u00e8re et saharienne, sans oublier la Kabylie, chaque r\u00e9gion r\u00e9v\u00e8le des tr\u00e9sors gustatifs uniques \u00bb, peut-on lire dans la pr\u00e9face de Go\u00fbts d\u2019Alg\u00e9rie, paru chez Mango le 20 octobre dernier, dans une tr\u00e8s belle collection d\u00e9j\u00e0 \u00e0 l\u2019origine de Go\u00fbts d\u2019Afrique, du chef Anto. Un voyage culinaire complet, \u00e9maill\u00e9 de r\u00e9cits de personnalit\u00e9s bien connues de la diaspora comme du grand public, tels le journaliste Rachid Arhab, la r\u00e9alisatrice Lina Soualem, ou encore l\u2019historien Benjamin Stora.<\/p>\n<p>L\u00e9gumineuses<\/p>\n<p>Condiments, sauces, pains, soupes, entr\u00e9es froides et chaudes, plats embl\u00e9matiques, comme le loubia \u00e0 la viande de veau ou encore le tajine de petits pois et artichauts\u2026 Une cinquantaine de recettes ont \u00e9t\u00e9 \u00e9labor\u00e9es et norm\u00e9es pour la pr\u00e9paration du livre. \u00ab Un proverbe arabe dit que ton \u0153il est ta balance, s\u2019esclaffe Hanane. Ma maman a d\u00fb refaire toutes les recettes en \u00e9valuant les bons dosages et en estimant les temps de cuisson pour que tout le monde puisse les reproduire \u00bb, rapporte-elle.<\/p>\n<p>Dans l\u2019assiette, direction Alger avec un couscous, non pas rouge, mais \u00e0 la sauce blanche ! La semoule (fine et l\u00e9g\u00e8re) est ici napp\u00e9e d\u2019un bouillon savoureux \u00e0 base de b\u00e2tons de cannelle infus\u00e9s, accompagn\u00e9e de morceaux d\u2019agneau de lait d\u2019Auvergne tendres (et pas gras !), de carottes, de navets et de pois chiches. L\u2019origine des produits est retrac\u00e9e avec soin. \u00ab Souvent la client\u00e8le n\u2019ose pas prendre ce plat car elle pense que c\u2019est du mouton. Or, on propose de l\u2019agneau label rouge, beaucoup plus doux. Pareil pour le poulet jaune, qui vient des Landes \u00bb, d\u00e9taille Hanane, qui r\u00eave de pouvoir importer des \u00e9pices d\u2019Alg\u00e9rie (coriandre moulue, ras el-hanout\u2026), mais qui est, pour l\u2019heure, confront\u00e9e aux barri\u00e8res des fronti\u00e8res.<\/p>\n<p>Des plats in fine \u00e9quilibr\u00e9s, qui font la part belle aux l\u00e9gumes. \u00ab On r\u00e9duit souvent la cuisine alg\u00e9rienne \u00e0 des plats de f\u00eates. On conna\u00eet peu celle du quotidien, qui reste un r\u00e9gime m\u00e9diterran\u00e9en tr\u00e8s frugal, avec plein de l\u00e9gumineuses. Par exemple, le couscous kabyle est r\u00e9alis\u00e9 \u00e0 partir de semoule d\u2019orge et de cinq l\u00e9gumes de saison cuits \u00e0 la vapeur, le tout arros\u00e9 d\u2019un trait d\u2019huile d\u2019olive, pas plus. C\u2019est m\u00eame un plat v\u00e9gan ! \u00bb, sourit la patronne.<\/p>\n<p>Si le couscous \u00e0 la semoule de bl\u00e9 reste le plat le plus connu de tous, Hanane a souhait\u00e9, dans son restaurant comme dans son livre, mettre l\u2019accent sur la diversit\u00e9 du terroir et la pluralit\u00e9 des techniques. \u00ab En Alg\u00e9rie, on travaille d\u2019autres c\u00e9r\u00e9ales, comme le mil ou le sorgho. Mais aussi plusieurs types de conservations, en fonction des r\u00e9gions. On conservera les piments dans du vinaigre, dans des bocaux, d\u2019autres produits dans le sel, et la viande, en la s\u00e9chant. La pr\u00e9paration du pain peut \u00e9galement varier. Dans le d\u00e9sert, on le fera cuire dans la terre. L\u2019Alg\u00e9rie est un pays tr\u00e8s \u00e9tendu, notre cuisine l\u2019est donc aussi \u00bb.<\/p>\n<p>Poissons marin\u00e9s, salades (de la traditionnelle chouchouka \u00e0 la salade de carottes au carvi \u2013 une \u00e9pice proche du cumin, au parfum l\u00e9g\u00e8rement anis\u00e9), sp\u00e9cialit\u00e9s \u00e0 base de l\u00e9gumes crus et cuits, et, c\u00f4t\u00e9 dessert, basboussa \u2013 un g\u00e2teau \u00e0 la semoule arros\u00e9e de sirop d\u2019orange, \u00e0 la fois fondant et r\u00e9confortant\u2026 Autant de saveurs de l\u2019Alg\u00e9rie \u00e0 d\u00e9couvrir \u00e0 la table de Mama Nissa ou, pour les marmitons, \u00e0 concocter \u00e0 la maison.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Fondatrice du restaurant Mama Nissa, Hanane Abdelli est \u00e0 l\u2019origine d\u2019un livre de recettes pens\u00e9 avec sa m\u00e8re, Anissa, \u00e9galement aux fourneaux de sa table parisienne.
