Les repas sont soit command\u00e9s la veille pour \u00eatre consomm\u00e9s sur place, autour d\u2019une table d\u2019h\u00f4tes de quinze couverts, soit livr\u00e9s, \u00e0 domicile ou sur le lieu de travail. \u00ab Je cuisine en fonction des envies de mes clients, et non par diktat des mets, raison pour laquelle mon r\u00e9frig\u00e9rateur est vide quand je n\u2019ai pas de r\u00e9servations \u00bb, confie-t-elle.<\/p>\n<p>L\u2019amour d\u2019Olivia de Souza pour les mets savoureux remonte \u00e0 son plus jeune \u00e2ge. D\u2019abord au sein du cercle familial, puis en France, o\u00f9 elle est arriv\u00e9e en 1989 pour faire deux ann\u00e9es d\u2019\u00e9tudes au lyc\u00e9e Grandmont de Tours, conclues par un baccalaur\u00e9at G2, avant de se tourner vers un BTS en tourisme et commerce. Tout en \u00e9tudiant, elle proposait des plats \u00e0 ses camarades afin de subvenir \u00e0 ses besoins. Ce qui lui a permis de cr\u00e9er tr\u00e8s t\u00f4t un r\u00e9seau et de tracer sa voie vers l\u2019ind\u00e9pendance financi\u00e8re dont elle avait toujours r\u00eav\u00e9. \u00ab Je savais que je serais entrepreneuse, mais j\u2019ignorais que ce serait dans la cuisine, qui est devenue toute ma vie et ma passion \u00bb, glisse-t-elle.<\/p>\n<p>\u00c2g\u00e9e de 50 ans, dont vingt-cinq consacr\u00e9s \u00e0 son art, la cheffe se d\u00e9finit comme une cuisini\u00e8re itin\u00e9rante, qui aime proposer des tables d\u2019h\u00f4tes dans les capitales africaines. Apr\u00e8s Abidjan, Libreville, Dakar, Accra et Cotonou, elle s\u2019appr\u00eate \u00e0 promouvoir son savoir-faire au cours du mois de mai, \u00e0 Brazzaville. \u00c0 ses propres recettes, relev\u00e9es d\u2019un m\u00e9tissage d\u2019\u00e9pices locales, s\u2019ajoutent des plats classiques de nature \u00e0 satisfaire une client\u00e8le diversifi\u00e9e. Galettes de haricots (appel\u00e9s \u00ab kp\u00e9djigaou \u00bb au Togo), salade de tomate-oignon-concombre, parmentier d\u2019igname, yassa de poisson ou de l\u00e9gume\u2026 L\u2019authenticit\u00e9 de sa cuisine marque les esprits.<\/p>\n<p>Difficile de passer dans son \u00e9tablissement sans go\u00fbter au wangash confit \u00e0 l\u2019huile de coco, pr\u00e9sent\u00e9 dans une petite bouteille livr\u00e9e \u00e0 3 500 francs CFA (5,30 euros), ou des plats de fonio, qu\u2019elle m\u00e9lange habituellement \u00e0 des graines de s\u00e9same. Au Togo comme en France, elle aime servir le djenkoum\u00e9, un plat familial r\u00e9alis\u00e9 \u00e0 base de farine de ma\u00efs, qu\u2019elle surnomme \u00ab la polenta togolaise \u00bb.
